the most basic of 3d engines in XNA...

Anyone have any good tutorials for something like this? I'm talking "Orcs and Elves" or Doom style basic, nothing nearly as complex as even Quake.

If not, what would be the best "next step" for someone who feels comfortable in a 2d setting? I'm off to the bookstore tomorrow to pick up a book or two, but would be interested in seeing what everyone thinks.

I'd say start with a hollow box and get a dot or a stick man running around in it.

Beyond that you either need to stick with something convex, or start worrying about spatial partitioning algorithms, which can get hairy.

Terrain is really easy to do provided it is convex. For every XY on the map, the Z of the surface can easily be found.

You should start by 3D graphics before starting doing 3D gameplay.
Maybe port your current 2D graphic engine in 3D, use polygons with textures instead of sprites, add some shaders maybe, play with depth and stencil buffers, try doing some raycast or animating 3D models instead of sprites, play with the camera, field of view, etc.
Maybe you could as well gather some knowledge on Matrix, Quaternion and Vector operations before to start, so you won't be afraid when you'll see one
