| Make sure you brine a bird that size for about 6 days. It's gonna be hard to keep the breasts from drying out, anyway. Brining will bind salt to the protein structures, allowing the meat to hold water much longer. I'd also cook the bird at 425-450 for the first 100 hours or so to lock in the moisture for the remaining cooking time. OMG the size of the gizzards on that thing. MMmm mmmm mmm! |
