As far as this "split role" of crafter vs. adventurer, I'm reading this stuff as being at odds and not meshing as well as would be optimal for me.

It sounds like being 2-games-in-1 except I only have time for one game, rather than being 1 game where I can fluidly swap roles.

I think my biggest problem is the adventuring vs. gathering aspect. I fail to see what would cripple me so much in my adventuring mode that I couldn't gather as efficiently? It's one thing to say that inventory space is used by my gathering utilities, but another to say that gathering is impossible when in your adventuring mode / gear.

The act of crafting is no big deal, as when you are crafting is generally not when you are adventuring, of course unless you have to use the special forge in the pits of hell. How would you get there without adventuring?
