| The cutting off hand is kind of symbolic - it prevents them from wielding their lightsaber and probably from channeling their force outwards (all their force powers seem to be done by hand gestures) and so cutting off hands in essence is the disabling of the Jedi |

| Besides the fact that cutting off one's hands/arms is a complete disable as he, logically, cannot use a lightsaber. Meanwhile it is also easier to injure a human being's "tentacles" as they are both used for offensive and that sorta leaves them off guard.
