I think two movies based on the Hobbit alone would be the best option. For all intents and purposes, they are going to have to make up a lot of the stuff that happens in between the Hobbit and the Fellowship if they intend to make that the entire second movie. At least by splitting the Hobbit story into two movies, they will have source material to refer too. They can also stretch out the battle of the five armies since in the book we miss most of the actual battle.
The two scenes that I really want as much time possible dedicated to them are when Bilbo first finds the ring and then runs into Gollum and then the first meeting of Smaug and Bilbo and their ensuing conversation. These are hands down my favorite two parts of the book. With the right actors, these will easily be the best part of the movie(s).
