VLAN Setup

I'm fairly new to setting up network infrastructure and i've got an interesting (to me) project coming up.

I've got two dell 3448p (layer 2) switches and a 6024 (layer3).

Currently I have voice (shoretel) and data on separate vlans (.1.x and .2.x). However, there are multiple separate companies on this network and I need to get them all on their own vlans for security and traffic reasons.

Does the following sound reasonable?

admin vlan:
firewall, switches, servers

public vlan:
public printers, etc (or put these in admin and forgo public vlan)

client 1 vlan

client 2 vlan

etc.

Any additional thoughts? I'm an IT rookie, be gentle (but firm)

edit: everyone should be able to get dhcp from the main server (on admin), but i'll probably need to make some ACL's for the servers
