They choked in both those games, I'll give you that. However, they have a Heisman favorite QB, like 6 or 7 HS All-American RBs, and return 10 of 11 starters on the best defense Pete Carroll has ever had. As far as the coaching, Pete Carroll has more NC rings (as a head coach) than any active coach in the SEC as far as I know (only one I'm not sure about is Phil Fulmer, and I'm pretty sure he only has one). Arkansas won the SEC West last year and, as I recall, their game against USC (at Arkansas) didn't go so well for the Razorbacks.
Edit: USC also consistently has better recruiting classes than SEC teams. Unfortunately, USC and the SEC's best teams (Florida and LSU) haven't played anyone of consequence in a big-game setting in recent years, so it's hard to say for sure. All three of those teams have played vastly overrated teams in their NC/BCS bowl games. But to say that it's impossible for USC to go undefeated in the SEC is just wrong and is yet another example of SEC arrogance.
