Brotherhood, some people (not me) like Weeds, Californication has potential, and Masters of Horror is sometimes really good. Not sure if/when MoH is starting up again though, there was supposed to be two more seasons at least, but the production company is having issues now. They are also known for cancelling their best series, almost as bad as Fox. Personally I wouldn't pay for Showtime because of what they did to Dead Like Me, replacing it with Fat fucking Actress, but I'd still take it over Cinemax any day.

As for HBO, they've had their fuck ups in the past (cancelling Carnivàle and Deadwood for starters), but between True Blood this fall and Preacher + SoIaF next year(?) they're looking pretty good. At least they replace shows with other good shows.
