Well in my opinion, provisioner is the best, and most dependable source of income over the life of your character. You only need the adept or master of a spell once, you only need a good ring/armor/weapon/shield etc once (maybe twice) per tier. As people level up and leave that tier, they are lost as customers for good (or until they return on an alt).

However...food and drink, are constantly consumed, and will always, across all levels, classes and professions be a needed "in demand" component. Even at level 70. Add to that the fact that there a NO advanced recipe books to have to pay through the nose for, and no rares that you must do the same for, and you have an excellent, easy to level, constant stream of revenue for your character . (I am not talking about advanced crafting such as tinkering etc, just the basic starter skills).

Beyond that, Alchemist will allow you to make your own spells (fighter) which can save you a TON of money in the long run, and even make you some nice money, but it a spikey, undependable way.

Tailor (for bags) or Carpenter (for boxes) are a limited market share type profession, but they are good money while it lasts, and probably okay overtime as alts are rolled and new people join the server etc.

The EASIEST way to make money is to just harvest. Even tier 1 rares go for rediculous amounts of money, and the demand is just about always there. Once you do reach level 70, you can do what some fuckfaces do as an example on Lucan D'lere and buy up an entire rare market, and resell them at 10X the normal price, buying up any and all rares that enter into the market under their price. I guess some people get off on that type of thing.

I think it's most important to do something you enjoy, there are plenty (probably the vast majority) of players who roll on in the game to level 70 and have everything they could ever want, and never touch a crafting station outside doing the occasional HQ requirement.

It's not mandatory.
