I know you said you are missing some ships but I'd take an Ishtar over an Arazu for Gallente. Hyperion is a pretty sweet tier 3 battleship as well. Myrmidon you mentioned is awesome. Might be the best bc in the game at the moment.
With regards to Minnie the Sabre is simply awesome. With the nano-nerf I'd venture to say the Tempest is the better way to go over the phoon. You can do awesome burst dps. Maelstrom is good too but I prefer the pest for most things. The Hurricane is a damn good battlecruiser.
The Scorpion is a decent battleship for pvp for the Caldari, but I hate Caldari so yeah... The Geddon is a good pvp ship for the Amarr. I have a soft spot for Amarr and respect anyone that sticks it out with them.
