A fair amount of ratting. Security status comes back slowly but surely, and life as a pirate is a LOT easier now that you can use one of your alt slots as a hauler almost immediately. You can get a Bestower with Industrial 3 in like 8 hours of training which can collect everything you need in Empire then bring it to lowsec.
I can't think of any corps that are so anti-pirate they won't accept reformed pirates - the roleplaying alliances(CVA/U'K) might be that hardcore but if you'd really decided that it wasn't for you then you could probably persuade them. There's not really any particular stigma to piracy that I've noticed, and most of EVE's famous personalities have been pirate at one point or another.
There's not really much danger of anti-pirates unless you're going to some very specific areas of space(Providence).
