Watch Yojimbo by Akira Kurosawa. It's not a "western western", but it served as the template for alot of future westerns. As you are watching it, it will feel like a western, but thats because Hollywood and the like ripped off his style after he made it (They also did the same with 7 Samurai, etc) ;p A Fistful of Dollars and Last Man Standing are remakes of Yojimbo, btw.

Most of the good westerns have already been mentioned, but I'll toss in another nod for Deadwood. Those who don't like Deadwood, suck cock by choice! This season especially kicks major ass and it's setting up for a really brutal finale when that shipment of "bricks" shows up.
