Watch the Once Upon a Time in China series, Fist of Legend and the classic Shaolin Temple for some good Jet Li action.
Jackies older movies are great to start with as well, Snake in Eagles Shadow, Drunken Master etc as well as Wheels on Meals(Good fights)
and after you have seen the most popular Jet Li and Jackie Chan movies and seen their fighting styles they've used in their movies, dont forget to watch some good Donnie Yen movies as well.
